  • 6 pounds (2 slabs) baby back pork ribs
  • your favorite dry charcoal-broil rub (I like McCormick Grillmates Sugariness & Smoky Rub)
  • your favorite charcoal-broil sauce (I like Sugariness Baby Ray's)
  • Preheat your oven to 275 degrees F.

  • Remove the membrane, or silverskin, covering the bone side of each rib rack. Slide a tabular array knife under the silverskin anywhere forth the rack. If it resists in 1 spot, effort another.
